Orange Blossom-Strawberry Pie

6 cups strawberries
3/4 cup sugar
3 tablespoons cornstarch
1 teaspoon orange peel -- grated
6 tablespoons water
2 tablespoons orange juice, frozen concentrate -- thawed
pie crust (9 inch)
Rinse strawberries and drainon paper towels; hull berries.
In a 1 1/2 quart sauce pan, combine sugar, cornstarch and orange peel. In
a blender, whirl 2 cups of the least perfect strawberries with water until
smoothly pureed; pour puree into pan, mixing well. Cook, stirring often,
over medium-high heat untilmixture comes to a full boil, about 5 minutes.
Stir in orange juice concentrate to taste.
Arrange remaining strawberries, tips up, in pastry shell; evenly spoon the
hot cooked berry glaze mixture over the whole berries, covering completely.
Chill until glaze is cool and set, at least one hour or, covered, up until
the next day.

Strawberry Cheesecake Pie

8 ounces cream cheese
1 cup sugar
1 teaspoon lemon peel -- grated
2 tablespoons lemon juice
1 pie crust (9 inch) -- baked
4 cups strawberries
2 packages strawberries, frozen -- mashed
1/4 cup cornstarch
Beat cheese, 1/2 cup sugar, lemon peel and juice until well combined; spread
in pie shell; top with fresh berries. Cook mashed berries, 1/2 cup sugar and
cornstarch until bubbly; cook two minutes more. Cool completely; pour over
strawberries in pie shell. Chill. Top with whipped cream.

1 quart strawberries
1/2 cup sugar
1 envelope gelatin
1 tablespoon lemon juice
1 pie crust (9 inch) -- baked
1 banana
Mash 3 cups of the strawberries. Halve or slice remaining strawberries;
set aside. Strain crushed strawberries; add water to juice to equal 1 cup
liquid. Reserve crushed strawberries.
In a medium saucepan, stir together sugar and gelatin. Add the 1 cupliquid.
Cook and stir over medium heat until gelatin and sugar are dissolved. Stir
in reserved crushed strawberries and lemon juice. Transfer mixture to a
mixing bowl. Chill till partially set.
Pour half of the mixtureinto the pie shell. Thinly slice banana; arrange
in a single layer over strawberry mixture. Top with remaining strawberry
mixture. Arrange strawberry halves or slices on top. Chill several hours
or until firm.
